Thick Caramel Filling

This caramel recipe is so easy to make and it is made in one pot, using just a whisk!

Just 4 ingredients are used to create the smooth and silky caramel, which is perfect used as a filling for cakes, or in a caramel tart.


Ingredients

1 tin of condensed milk (397 g)

4 tbsp golden syrup

3 tbsp caster sugar

200 g butter


Method

  1. Add all ingredients to a saucepan and melt on low heat until the sugar dissolves, stirring frequently.

  2. Turn the heat up and bring it to the boiling point, stirring continuously.

  3. Boil for around 8 minutes. Make sure you are constantly stirring or it will burn.

  4. Once the mixture looks like a soft fudge texture and is darker in colour, remove it from the heat.

  5. Place on a heatproof mat and stir for 2 more minutes.

  6. Allow to come to room temperature before using.

Notes

  • This caramel will thicken once it cools down, and it will thicken even further by putting it in the fridge.

  • If you are making caramel for the first time, take care and use a large pot to avoid splashbacks.

  • You can use this for any caramel treats, but please note that it is intended to be thick. It would be too thick to make drips on a cake once cooled.

  • You can also use this to make fudge by adding melted white chocolate and setting it in the fridge.
